Outrigger on the Lagoon ∙ Fiji Executive Chef and President of the Fiji Chef’s Association Shailesh Naidu has added yet another fine dining accomplishment to his ever growing repertoire, having partaken recently on a two week cruise on board one of the world’s finest liners the Crystal Symphony.
The voyage ferried discerning passengers on a two week food and wine festival throughout the South Pacific. On board were a collection of notable “foodologists”, wine buffs and handpicked artists and entertainers for the themed two week adventure.
Chef Naidu represented the Pacific Islands, taking guests through a South Pacific feast of tropical produce, fresh local seafood and Pacific cuisine. During the cruise, Chef Naidu prepared a gala dinner for 900 guests and presented cooking demonstrations as part of the on-board activities and entertainment.
“I have carried out many cooking presentations before” said Naidu, “but this one was particularly challenging as the guests were especially high end and from many different parts of the world. I had to showcase Pacific Cuisine to a group who knew very little about our food and take them on a culinary journey through the South Pacific”, he continued.
“The expectation was very high, however I was as an ambassador for Fiji and the Pacific and I put in all my efforts to showcase our amazing cuisine. Showcasing the Pacific’s fabulous array of fresh produce and promoting the abundance of talent within the islands was especially rewarding and judging by the amount of positive and encouraging feedback I personally received, The Pacific Islands can be proud of what we offer”.
“This has certainly been an amazing experience for me” said Naidu. “Whilst I certainly had my work cut out for me over the two weeks, I made time to soak up the excitement of cruise liner life, and took advantage of much of the on board entertainment and shows. The only side effect was these few extra kilo’s around the waist now”, said Chef Naidu with a grin.
